Il Casale de li Tappi has experience of breeding pigs semi-wild and in pen.
“Il Casale de li Tappi“ of Salvatori Alessandro, in cooperation with the family-run business “il Quadrifoglio” of Tiberi Ernesto and with Montin Riccardo of the restaurant “il Cenacolo“, are concerned with the reconstruction of an ancient race of pigs: the Black Belted Pig, at present it’s the only breeding farm having of this race.
The project was funded by the Region of Umbria in collaboration with Parco 3A and DSAAA (Faculty of Agriculture, University of Perugia).
The pigs that we butcher are raised by our company in a natural way, the light pig (black belted pig) in a semi wild condition and the pink Italian heavy one in dedicated pens.
With the breeding farm we check the entire production chain and the different stages of production.
Our cold cuts and meats with the semi-wild bred black belted pig are available only in designated periods of the year and upon reservation. It is in fact a niche product.
